Vada pav, wada pav, or wada pao, is a vegetarian fast food dish native to the state of Maharashtra. It is the famous street food of Mumbai that is available at every corner of the street. The dish consists of a deep-fried potato dumpling placed inside a bread bun sliced almost in half through the middle along with sweet chutney, green chutney and garlic chutney.

As we know raining seasons have started and eaten fried snacks during this season is Sone Pe Suhaga. But because of the coronavirus, we are unable to go outside and have outside snacks. So, I made it at home.

Vada Pav

Ingredients
  

For Gram Flour Batter

  • 1 Cup Gram Flour/ Besan
  • A Pinch Asafoetida
  • 1/4 tsp Turmeric Powder
  • 1/4 tsp Baking Soda
  • 1/4 tsp Red Chilli Powder
  • Salt to taste
  • 3/4 Cup Water ( Approx) As Required
  • Oil For Deep Frying

For Potato Mixture

  • 3 Pcs Boiled Potatoes
  • 2 tsp Oil
  • 1 tsp Green Chilli Crushed
  • 1 tsp Garlic Crushed
  • 1 tsp Garlic Grated
  • 10-12 Curry Leaves
  • A Pinch Asafoetida
  • 1/4 tsp Mustard Seeds
  • 2 Tbsp Coriander Leaves
  • 1/4 tsp Turmeric Powder
  • 1 Tbsp Lime Juice
  • Salt to Taste

Other Ingredients

  • 6 Pav/ Ladi Pav/ Burger
  • 6 Green Chilli Fried
  • 3 Tbsp Green Chutney As Per Taste
  • 3 tsp Tamarind Chutney As Per Taste
  • 3 tsp Garlic Chutney As Per Taste

Instructions
 

  • In a pan heat oil and add mustard seeds. When seeds start splutteing add A pinch of Asafoetida and curry leaves.
  • Add ginger, garlic and green chilli. Saute for a minute.
  • Now add turmeric powder and mix well.
  • Now add boiled mashed potatoes and mix well.
  • Now add chopped coriander leaves and lime juice and mix well.
  • Now in a bowl add gram flour, turmeric powder, Asafoetida, baking soda and red chilli powder.
  • Now add water and mix well and make a lumps free batter.
  • Now make ball size ball and coat well with gram flour batter.
  • Now deep fry in hot oil and stir ocassionaly.
  • Take the vada on a kitchen paper to absorb excess oil. keep aside.
  • Now take the green chilly and fry , by turning off the flame of the gas
  • Now take a pav now and slit into half without cutting it fully.
  • Now spread green chutney , tamarind chutneyand some garlic chutney.
  • Place the vada in the centre of the pav.
  • Serve hot with the green chilli.
