Chawal ki kheer or rice kheer is one of the most made sweet dishes in many Indian homes. It is flavoured with cardamom, raisins, saffron, cashews, pistachios or almonds.
Sharad Purnima has its special importance in Hindu traditions. It is the harvest festival celebrated on full moon day of Ashwin, marking the end of Indian Monsoon and starting of the winter season.

It is also believed that Amrit (Nectar) drips on planet earth on this day. Therefore the moonlight on Sharad Purnima is believed to possess amazing medicinal and nourishing properties. People make kheer or milk rice and place it under the open sky to absorb the moon light throughout the night and consume it in the morning to get the miraculous powers of moonlight for health and happiness.

  • 1 ltr Full Cream Milk
  • 1/4 Cup Rice
  • 1/2 Cup Sugar As Per Taste
  • 1/4 tsp Cardamom Powder
  • 15 pcs Almonds Chopped
  • 10 pcs Pistachio Chopped
  • 10 pcs Cashewnuts Chopped
  • 20 pcs Raisins
  • 2 Tbsp Nuts Poder (Almonds+ Pistachio+Cashewnuts)

Instructions
  1. Wash rice and soak in water for about 30 mins. This helps to cook the rice quickly.
  2. Bring milk to a boil in a large heavy bottom pot.Add drained rice and begin to cook on a medium flame until the rice is soft, completely cooked and lightly mushy.
  3. Add sugar, stir and continue to cook until the kheer turns thick. Keep stirring in between to prevent burning.
  4. Add cardamom powder, nuts powder and chopped nuts . Stir and continue to cook for 5 minutes.
  5. Switch off the flame when the kheer reaches a desired consistency. It is good to switch off when it is of a runny consistency because It thickens once it cools down.
  6. Garnish rice kheer with more nuts and serve hot or chilled.
