Rainbow Rice – How to Make Rainbow Rice

Rainbow Rice is my inspiration from rainbow nation (South Africa). This is yummy and non-spicy rice dish.


Olive Oil – 2 Tbsp
Onion – 1 Finely chopped
Garlic Cloves – 3-4
Red Capsicum – 1/2
Yellow Capsicum – 1/2
Green Capsicum- 1/2
Carrot – 1/2
Curry Powder – 1 Tbsp
Basmati Rice – 1 Cup Boiled
Salt  & Black Pepper to taste
Fresh Coriander leaves – Chopped

Preparation Method:

  1.  Heat the oil in a Kadhai and sauté the onion and garlic for 2 minutes until slightly soft.
  2. Add Chopped Vegetables and cook until slightly crispy.
  3. Add Rice, curry powder, salt and black pepper. Mix well and let it cook for 1 minute.
  4. Serve HOT with Cucumber Raita.
