Mirchi Vada, or Mirchi Bhaji, is a popular Rajasthani snack. This dish of green chilies filled with spicy potatoes, dipped in batter and fried, makes a mouthwatering snack for people who love hot, spicy food.

If you don’t want spicy Mirchi Vada, please don’t put any red chilli in stuffing.


For Stuffing:

Large Green Chilli ( Bhavnagri Mirch ) – 4
Boiled Potato – 2
Coriander Powder – 1 tbsp
Turmeric Powder – 1/4 tsp
Red Chilli Powder – 1 tsp
Garam Masala Powder – 1 tsp
Chat Masala- 1 tsp
Fennel Seeds – 1/4 tsp
Cumin Powder – 1/4 tsp
Oil – 2 Tbsp
Salt to Taste

For Mirchi Vada Batter:

Gram flour/ Besan – 1 cup
Turmeric Powder – 1/4 tsp
Red Chilli Powder -1/4 tsp
Baking Soda – 1/4 tsp
Salt to taste
Water As Required

Other Ingredients:

Oil for Frying

Preparation Method:

For Potato Stuffing:

  1. Peel of the Potato. Heat oil in a Kadhai.
  2. Add Grated potatoes , turmeric powder, red chilli powder, garam masala, chat masala, cumin powder, fennel seeds and salt to taste.
  3. Mix well and Cook for 3-4 minutes. Switch off the flame.
  4. Take out the mixture on a plate and let it cool.

For Making Vada:

  1. Wash and wipe the Chillies, slit lengthwise, and de-seed.
  2. Fill the Potato filling very well inside the Chilis. Stuff all chillies and keep aside.
  3. In bowl add Gram Flour, Salt,Turmeric Powder, Red Chili, Baking Soda and water, to make a thick batter.
  4. Heat the oil in a Kadhai. When oil is heated enough dip the stuffed chilis in batter and deep fry them until golden brown and crisp.
  5. Place mirchi vada on paper napkin and remove excess oil.
  6. Serve this Hot Rajasthani Mirchi Vada  by sprinkle some chat Masala along with green chutney , Imli ki Chutney and Hot Cup of Ginger Tea.
