Dum Aloo or Alu Dum is a potato based dish, it is a part of the traditional Kashmiri Pandit cuisine, from the Kashmir Valley, in the Indian state of Jammu and Kashmir. But i am making different style of Dum Aloo, also known as Banjara Dum Aloo.

Dum Aloo or Alu Dum is a potato based dish, it is a part of the traditional Kashmiri Pandit cuisine, from the Kashmir Valley, in the Indian state of Jammu and Kashmir. But i am making different style of Dum Aloo, also known as Banjara Dum Aloo.


Ingredients

  • 4 small size Potato (Par boiled cut into half)
  • Oil for frying
  • For Marination:

  • 1 cup Yoghurt
  • 2 Tbsp Sesame Seeds Paste (fried sesame seeds + Cumin + Coriander Powder
  • + Coconut + Ginger + Green Chilli + dry whole red chilli)
  • Salt to taste
  • 1 tsp Red Chilli Powder
  • 1/2 tsp Turmeric Powder
  • 1 tsp Coriander Powder
  • 1 Tbsp Besan
  • For Gravy:

  • 2 Tbsp Oil
  • 2 Whole Red Chilli
  • Asafeoitida a pinch
  • 2 chopped Green Chilli
  • 1 Tbsp chopped Ginger
  • 1 tsp Coriander Powder
  • 1 tsp Cumin Powder

Directions

  1. Heat oil in a pan and deep fry potatoes until golden brown. Drain on absorbent paper.
  2. In a large bowl take yoghurt, sesame seed paste. Mix well.
  3. Add salt, red chilli powder, turmeric powder, coriander powder, gram flour and mix well.
  4. Add fried potatoes and mix well. Set aside for 15 minutes.
  5. Heat oil in a pan. Add dry red chilli, Asafeoitida, green chilli, chopped ginger. Saute for a minute.
  6. Add marinated potato and mix well. Add some water and Cook for 5 minutes.
  7. Add salt, coriander powder, cumin powder. Mix well.
  8. Cook for a minute and Serve Hot with Chapati or Paratha.
